Chocolate moose

Servers about 2-3 people
4oz of chocolate chips
1 oz butter
1 ½ egg yokes
2oz egg whites
½ oz sugar white
3-4oz heavy cream

Grab a pot and add water and let boil. When boiled take off heat. Put the whites in a bowl and whip hard and long till it’s all foamy. You will need to whip it once and a while it will separate. When all of the whites are foamy add the sugar and mix. Add the cream to another bowl and whip till it’s foamy too. In one bowl add the chips and put over the hot pot. Melt the chips and don’t burn them, mix allot. When the chips are melted add butter and mix. When the butter is melted add the egg yolks and mix. When the chocolate is mix add all the foam and mix together, don’t mix allot if you want a marble look, put it in the containers you want to serve the moose in and let it sit in the fridge covered for no less the 1hour.
I found the longer in the fridge the better.
