The best Pork for this is bone in Chops, however, you can use any filet of pork.

4 Chops
1.5 cup white flour.
1 cup bread crumbs ( home made or store bought, flavor of your choice )
3 eggs ( you may need to add more if your dipping is not quick )
1 tbl spn Salt
1 tbl spn Pepper ( for spicy use your favorite hot sauce in the eggs)
1 cup of oil - Olive at lower temp (less flame more time) Veggie at higher temp(less time)
1 tbl spn of Rosemary.

Crush Rosemary and add to eggs.
Put the flour, salt and pepper in a large mixing bowl. Mix well.
Put Eggs in a separate mixing bowl ( and spice of your choosing )
Put Bread Crumbs in a separate bowl.

Take the Pork and lay it on your cutting board, put a piece of plastic wrap over the top and beat with a blunt kitchen tool until it spreads.
Take pork dip into the Flour bowl ( coat the pork ), then the egg bowl ( let excess drain off ) then into the bread crumbs.
In an Iron Skillet, heat oil to frying temp -not so that it smokes or even boils- then fry the pork lightly (until the golden brown color appears.)

NOTE!!!!! DON'T HAVE THE OIL TOO HOT! IF SO YOU WILL COOK THE OUTSIDE OF THE PORK BEFORE THE MIDDLE IS DONE!!!!


Place on a paper towel to soak up excess oil and cover with aluminum foil and a towel for 5 min.
Take the thickest piece and cut the center, if it is pink, place in the oven @ 350 for 5 min. still wrapped in foil. At 5 min, remove foil and cook for an additional 3.
This is best severed with REAL gravy, Mashed Potatoes, and your favorite salad. Dont forget the biscuits.
