Serves 2

2 boneless, skinless chicken breasts
1/2 head Romaine lettuce
1 cup cooked rice
2 limes
2 Tbsp. President's Choice black bean and corn salsa
2 green onion
2 Tbsp. chopped fresh cilantro
1 Tbsp. olive oil
1 tsp. sugar
chili powder
coriander
salt and pepper to taste

Sprinkle chili powder and cilantro on chicken breast and grill.  Meanwhile, chop and arrange the romaine lettuce between 2 plates.  Add salsa to the rice and divide between plates, laying atop of the lettuce.   When chicken is done, slice into slivers and arrange next to rice.  Sprinkle with chopped onions and cilantro.  Dressing:  squeeze juice from limes into glass,scraping off pulp into glass also.  Add olive oil, sugar and mix until sugar dissolved.  Divide over salads, drizzling over chicken and lettuce. Serve.
