Servings, 4-5.
WASH THE POTATOES BEFORE YOU COOK THEM. YOU WILL BE EATING THE SKINS>
Any Potatoes you want, use 1 per serving for large, use 2 per serving for small.
Quick - Microwave 2 at a time, cut in half, covered with butter and spice for 5 min or until done and then proceed.
Not so quick - Place potatoes  in tinfoil, with butter, parsley, and 3 thin layers of Vidalia/sweet onions. (meaning slice one large Vidalia onion and use 3 full slices) garlic by volume, we will say 1 large clove per serving.
Bake at 45 minutes at 400 degrees F. Make sure they are done.

Once you have them baked, take all potatoes and contents of the baking and put them in a LARGE bowl. Add 1/2 cup of warm milk for a start. MASH THE HELL OUT OF THEM. You should have small chunks of Potatoes left with alot of mush. If the mixture is too dry, add more milk. 1/5 cup at a time until you get the right consistency. Heat at med for 5min and add salt and pepper to taste. The more the milk, the smoother they will be. Buttermilk works, but you should simmer the milk with some Potatoes and spice to make it GREAT. I suggest using whole milk.

Want Cheese? add some. I suggest cheddar or asiago. Leave the cheese for the last step prior to serving.
